Homemade Chocolate frosting
This frosting is incredibly awesome, because its smooth, thick, and hardens really well. I personally like hard icings! I put this on top of both chocolate chip cookies and spongy chocolate cake.
1 can of condensed milk 1 pkg of Hershey’s semi-sweet chocolate chips or 1/2 pkg of almond bark 1 c of cooled, condensed coffee, any flavor! (I recommend a cinnamon flavored or Jamaican roast)...

1 pkg of Jiffy blueberry muffin mix (or make your own muffin mix, add fresh blueberries!) 1 c of unsweetened applesauce (takes the place of eggs and milk in the muffin mix) 1 T of cinnamon

Pesto tarts
Filling: 15 oz of ricotta cheese (make sure it is NOT reduced fat!!!) 1/3 c. of grated Parmesan cheese 3 oz of pesto (Classico pesto sauce does the trick; it has everything in it, but homemade pesto is just as nice!)
